Mandy Yin is chef-owner of Sambal Shiok Laksa Bar in London. An ex-lawyer and self-taught chef, Mandy started off with a street food stall in 2013, followed by pop ups before opening Sambal Shiok in 2018 to critical acclaim. She has steadily built a loyal following for her unique dishes, drawing on her memories of growing up in Kuala Lumpur combined with influences from London and around the world.
Spicy, pungent, no-holds-barred flavours are her calling card. Mandy’s goal is to showcase Malaysian food whilst being accessible and welcoming to all. She opened her second standalone site, Nasi Economy Rice in March 2020.
Her first book Sambal Shiok: The Malaysian Cookbook was published by Quadrille in October 2021 and her second book, Simply Malaysian: Everyday Dishes to Cook at Home was published by Quadrille in July 2025.
